Lemon Drop Martini and Herb Parmesan Crisp

A perfect pairing!

The Lemon Drop Martini

Shake 2 oz. JABnow Organic Lemon Lime Mixer, 2 oz. water, 4 oz. vodka and 1 oz. Limoncello (optional; gives it depth) with ice.  Strain and pour into sugared rimmed martini, long stem glasses and add a lemon peel to each for garnish.  Better leave room for a second cocktail as these are fabulous.

Easy Herb Parmesan Crisps

The crisps are rich and aromatic and pair incredibly well with the lemon drop martinis. 

Preheat oven to 450 degrees.


Parchment Paper, Rolling Pin (optional)

10-12 oz. grated parmesan cheese

2-3 T. Finely chopped fresh herbs such as tarragon, parsley, thyme or whatever you like.


Place some parchment paper over a cookie sheet.  Place heaping tablespoons of the grated parmesan on the paper.  Sprinkle with herbs.  Spread them out just a bit so you get lacy crisps with small holes throughout.  

Place in oven.  Watch carefully.  Depending upon how thick you made them they can get lightly brown in 3-4 minutes or may take up to 7-8 minutes.  Don't over brown them.  

Take them out.  If you want them a little fancy.  Lift with a spatula and immediately curl them over a rolling pin for a few seconds.  They are hot, be careful.  Place them in a nicely bowl with a clean, colorful towel.  Enjoy.  Makes enough for two!  Atkins friendly.
