Easy and Refreshing Cantaloupe Granita with Mint

This recipe is so refreshing, delicious and even healthy!  It can be made with other melons such as honeydew, watermelon and other summer melons.  Fresh mint is the best and only option. The melon must be ripe.  

1 ripe cantaloupe, cut into chunks

4 oz. JABnow Organic Lemon Lime Drink Mixer

1/2 cup sugar (taste the blended mixture before adding this sugar)

Juice of 1 lime, zest too

1-2 T. Chopped, fresh mint

2-3 T. Tequila (optional, vodka is great too)

Blend the cantaloupe, drink mixer, lime juice, zest, mint and tequila or vodka in blender or food processor.  Taste it.  If it's sweet enough, don't add additional sugar; if not, add sugar. Don't leave any melon lumps. 

Pour into 9x13 super clean glass dish.  Place flat in freezer with no cover.  After an hour, stir with fork.  Stir every hour or so to create lumps and crystals and avoid it freezing solid, like a pop sickle.  Spoon into tall glasses with wide opening like martini.  Garnish with mint.  Enjoy
