Chai Rum Toddy

The holidays are for hot toddies and the best one we've ever had is our Chai Toddy.  It's delish and you can make it at home and easily make your own Chai packets too!  

Chai and Cachaca Rum Toddy

Makes 2 Toddies

1 T. Loose Tea (We love Earl Grey, either black or white--we used white)

2 oz. JABnow organic lemon lime drink mixer

2 cheese cloth packets with Chai spices in them, along with the tea above. Tied with kitchen twine. 

Chai spices include:  whole cloves, cardamom, fresh ginger, black peppercorns, cinnamon stick, allspice and juniper berries (optional).  All you need is a couple each of these berries and a few slices of fresh ginger.  If you don't happen to have fresh ginger, 1/8 t. dried in the packet.  It will dissolve in the tea.  

You can make these packets up ahead of time to let everyone make their own Chai and Rum Toddies.  Great after you've had that play date outside with the kids, skiing, and other cold weather activities.

How to make a Chai Toddy

Place 1-1.5 C water in a microwave safe mug.  Heat it for 2 minutes until very hot, but not boiling.  Drop in Chai packet you made up.  Let it steep for 2-3 minutes; then add 1 oz. of JABnow lemon lime drink mixer and 1-1.5 oz. Cachaca rum or other spiced or sugar cane rum you have.  

You need no sugar as the JABnow has organic pure cane sugar in it.  Garnish with lemon wheels; you can stud them with cloves for a nice affect and drop in a cinnamon stick.  

If you have a big thermos and want to take these with to the outside activity a party or wherever, you can make a big packet of the Chai, depending upon how many cups of water your thermos holds, and place it in there with the hot water and even the JABnow.  Add the alcohol when you reach your destination or if you are not traveling far, place it all in the thermos. 

This recipe is obviously easy to make virgin by omitting the rum.  Kids love it too!
